GUSTOSAL® Nitrite Curing Salt is manufactured by Salinen Austria AG for meat processing applications. The product is made from vacuum salt and contains 0.5–0.6% sodium nitrite. FAQ
How does 0.5–0.6% nitrite curing salt differ from Cure #1 or Prague Powder?
European nitrite curing salt typically contains 0.5–0.6% sodium nitrite. Cure #1 and Prague Powder use different nitrite concentrations, so the products are not interchangeable on a like-for-like dosage basis.
Why is the homogeneity of the salt–nitrite blend important?
Nitrite is used in formulations at low inclusion rates. Uniform distribution throughout the salt carrier supports formulation consistency and repeatable results between production batches.
Why can the same formulation produce a different colour in the finished product?
Colour is affected by meat quality, pH, temperature profile, holding time, heat treatment and other process parameters. Nitrite curing salt is only one of the factors involved in colour formation.
Can nitrite curing salt be replaced with ordinary food salt?
Where a formulation specifies nitrite curing salt, ordinary food salt is not an equivalent substitute. It does not perform the functions of nitrite in the relevant production processes.
Can pure sodium nitrite be used instead of nitrite curing salt?
Most production processes use nitrite curing salt with a controlled nitrite concentration. This allows formulations to be prepared without separately dosing pure sodium nitrite.
